When work revolves around accommodating people and catering to their tastes, every day is hard work. Veteran restaurateur Elbert Cuenca is living proof.

 

Elbert has been in the food business for almost 30 years now, learning and mastering everything through experience. He currently owns several namesake restaurants  Elbert’s Diner, Elbert’s Pizzeria, and Elbert’s Steak Room — as well as modern French restaurant, Metronome.

Elbert’s day often depends on the kind of
customers he serves and the quality of sleep he
gets. His schedule is heavily influenced by his
customers, depending on what time his customers
leave the restaurant. Despite this, he always makes
sure to get at least seven hours of sleep.
